芝麻斑 (布氏石斑魚)

一般內地簡稱芝麻斑一般體長25~30cm,體表以及除胸鰭外的各鰭上滿布寶石狀斑點。胸鰭上具赤色條斑,尾鰭淺凹形,邊緣呈白色。為暖溫性中下層魚類,多生活在岩礁底質海區,具性轉變,為先雌後雄,生長較為緩慢。石斑魚性兇猛,機警,以肉食為主,喜食魚、蝦、蟹類,不喜結群,饑餓時有自相殘殺現象。寶石石斑魚分佈於印度洋和太平洋西部,我國產於南海。我國多個省份有進行人工網箱養殖。

 

台灣人都說是七星斑是星斑類的總稱。在本港水域中只能找到一種七星斑,這就是現我們熟悉的東星斑。他們分佈於全港海域,在香港東面水域從清水灣至塔門一帶為最多。五、六十年代魚民都稱東星為七星班,但香港的東星一般都不能用魚絲釣到,偶爾間會給魚籠或魚網捕獲,所以本地供應量極小。香港在七、八十年代仍有大量的東星,1975年我在船灣淡水湖的主壩潛水便看見過大量的東星幼魚,但兩三年之後,可能海水開始變壞,東星好像特然在香港消失,整年潛水也不能遇到一兩次。東星在香港市場出現始於七十年代中期,漁船開始安裝大馬力機器,可以到離香港一百六十多海浬的東沙島捕魚,當年,在東沙捕獲的仍是稱為七星斑。之後,漁船開始往較遠的西沙群島捕魚,在該處卻捕獲另外一種七星班。避免混淆,在東沙捕到的品種便稱之為東星,西沙的便稱之為西星。

七星班類生長在熱帶水域,水溫在攝氏18至30度的珊瑚礁均可發現其蹤跡。同一個家族有多個不同的品種,除東星外有西星、豹星、黃帝星、太星、燕子星、花面星、臘腸星等。東星最大的有15-16斤,西星最大只有5-6斤,但豹星則可長至50-60斤。最美味的七星斑是花面星、黃帝星,燕子星次之。但花面星及燕子星都是極容易死亡的魚類,所以很多酒樓都不願入貨。來自不同產地的魚食味有很大的分別,從經驗,舊魚場的魚種比新魚場好,香港及東沙出產的東星最佳,菲律賓、越南次之,印尼又次之,而澳洲之東星魚味近年已有進步,但仍排在榜尾。香港現時一些高級食府指定只用菲律賓的東星,當然價錢亦比較高。

東星班是現時海鮮宴上最流行的魚類。東星班主要分為紅色(俗稱紅東)及黑色或暗紅色(俗稱黑東)兩種。在魚類典籍中黑東是同族中的另外一種魚。我在室內養殖東星斑期間卻發覺魚類身體顏色會隨著情緒及環境而改變,時紅時黑,是否長大到某尺碼便會定形則仍未能知悉。紅、黑二東,黑的食味較好,就是賣相較差。

紅東受歡迎主要是它的顏色艷麗。中國人辦喜事意頭最重要,紅色代表幸運、褔氣、吉祥所以宴會主人都樂於採用。當香港並未有外國活魚供應時,酒席魚類主要是養殖紅斑。除了意頭,貨源供應穩定亦是重要因素,宴會主人都不能接受在席上使用不同品種的魚類。現時酒樓供應的魚類並不一定是最美味可口的品種,他們考慮的反而是供應量穩定及死亡率低的魚種。香港的東星主要由東南亞國家進口,其中約百份之四十由澳洲大堡礁捕獲後出口到香港。近年澳洲政府為了保障東星得到健康的繁衍而施行了出口限額制度,每年只許一千噸活東星出口。

七星班肉質幼滑潔白,魚味佳,一直是海鮮行中的中上價魚。十多年前在海鮮酒家吃一尾兩斤半的紅東往往要付出近千圓,在大節日期間千多兩千圓一尾也是常事,這也反影了當年經濟蓬勃的日子。九七年後經濟下滑,海鮮價一沉不振,三、四百圓已可吃到一尾東星了。但最近香港經濟節節上升,失業律創近十年新低,魚的供應明顯追不上需求,加上國內需求大,七星斑魚價已上升了不少,看來每日不同的海鮮價日子又再重臨了。
