龍蝦血,生魚片,就是fb網路賣的所謂凍龍蝦和野生活龍蝦的價值差異~

 龍蝦血放出後,往尾鰭下方中間一"排泄腔口",用小剪刀在腔口周圍剪開,輕輕拉就可以把砂腸整條抽出,砂場內都是砂末與龍蝦的排泄物.清完在煮就沒有臭腥味了

問題一

龍蝦 如果要 丟冷凍保存 ……是否都要 先燙熟再凍 ……?

這要看你食用牠的時間,預計兩三個禮拜內食用掉~不要熟凍,

如超過,沒熟再凍的龍蝦肉會不好吃。

如果是幾天內要吃掉,沒裝備養,我建議是生的包保鮮膜直接入冰庫,吃的時候要快速解凍再煮,不要像魚類一樣靜置慢解,要直接蝦體沖水快速解凍,蝦很容易解凍,邊解邊剪刀拆,拆掉就更快解凍,備好蔥江蒜,直接處理下鍋,這樣料理起來很接近活的肉質。

慢解肉會乎乎ㄉ,可能是蝦肉的特性易腐壞,我以前有過一次經驗是,放一下午解凍結果晚上回家裡面發黑..還好幾隻..

如果是沒打算近期吃掉,熟再凍,冰半年都一樣,但是熟凍的我感覺只要有凍這個程序,再解的話味道就差了,絕不會有那種彈牙的口感,但為什麼要熟凍?我想原因是為了要長期冰存,比如國外進口的量大,銷售上比較沒壓力。
